Classic Smoked Bologna 2.0

Smoked Bologna


Growing up I can remember my Grandpa smoking all kinds of different meats on his smoker. Even though this Bologna recipe is super easy, it reminds me of a fond memory of my grandfather. Be sure to share your thoughts on my recipe below.

Who wants a slice of this Bologna?


Ingredients:

5 lbs. Bologna
1/3 cup Mustard
1 tsp. Celery Salt
1 tsp. Paprika
1 tsp. Cumin
1 tsp. Cayenne Pepper
1 tsp. Ground Cumin
1 Tbsp. Siracha

Bologna Binder Ingredients

1/3 cup mustard
1 Tbsp. Siracha
Tip: Mix before putting on Bologna

Rub Directions: Mix celery salt, paprika, cumin, cayenne pepper, cumin in a bowl. Tip: I used a small electric coffee grinder; this almost makes it into a powder.

Bradley Smoker Settings:
Smoke Temp: 226F
Cook Time: 180 minutes or 3 hours
Smoker Timer: 180 minutes or 3 hours
Wood: Beer.

 Directions

1. Set your Bradley Smoker to the listed settings above.
2. Using the tip of a sharp knife, cut into the bologna about 1 inch thick in a square pattern on all sides of the bologna.
3. Coat the bologna with the Bologna Binder and then coat the Bologna using the Rub. Make sure to push the binder into the cuts.
4. Smoke the Bologna for 3 hours. Bologna is precooked so you can judge the completion based upon the color and flavor that you prefer.
5. During the last 30 minutes of cooking, you can brush on the BBQ sauce of choice.
6. Slice anyway you prefer and Enjoy!
