No one knows what 2021 will hold. What will this new year look like? Will it continue with many binges of junk food to help get through times of uncertainty or will you hit a diet hard come January? Advice coming from just another person “hanging in there”; small steps. I, like many others here in Oklahoma, love cooking from the heart. Well, that is not always so ‘heart healthy’. We southern chefs love our butter, carbs, oils, and fats. While those all have their place in even the healthiest kitchens, I’ve found I can sometimes merge my love of my southern style while also working on my health by doing just that, small steps. This is my classic alfredo recipe that has been featured in numerous magazines and blogs. Only swap, yellow and zucchini squash for noodles. You can steam these (some even come frozen in steam able bags), you can use a KitchenAid attachment which is what I did to get my noodle shape, or you can simply slice and sauté. This is your 2021, and while aiming for perfection may not be everyone’s top priority; small steps are something we can all slide into our daily lives. Happy 2021, everyone.
2 Yellow Squash
2 Zucchini Squash
1 package Whole Grain Spaghetti (Optional)
2 cups fine Creamline Lamb Chopper cheese
1 cup fine grated Sarvecchio Parmesan Sartori cheese
1 1/2 cup heavy whipping cream
1tsp garlic powder
1 tsp onion powder
1 tsp Better Than Bouillon Chicken
4 Tbsp Olive Oil
4 Tbsp salted butter
Equipment needed: Kitchen Aide Spiralizer (To create the squash noodles).
Step 1: Place 3 tbsp. of butter in a saucepan and let it melt completely.
Step 2: Pour 1 cup of heavy whipping cream into the melted butter and turn down the heat to low. Stir the butter and cream together until it comes to a light simmer around the edges of the pan.
Step 3: Pour the Lamb Chopper and Sarvecchio Parmesan into the blend and stir on level 3 heat.
Step 4: Add in your garlic powder, onion powder, Better Than Bouillon Chicken and stir everything together.
Step 5: Add ½ cup of heavy whipping cream for the final touch and stir. The sauce should have all the cheeses completely melted and have one of the best tasting alfredo sauces you have had.
Step 6: Place your pasta on your plate, pour the alfredo sauce on top of the noodles, and squeeze your garlic clove over your pasta for the final touch. Enjoy!
Pasta (Optional if you do not want Squash noodles)
Step 1: Pour 4 cups of water in a pot and heat until the water is boiling.
Step 2: Add your wheat spaghetti pasta and let boil for about 12-14 minutes (stir occasionally).
Step 3: Drain the water once the noodles are cooked through
Zucchini Squash Noodles
Step 1: Wash the squash under cold water.
Step 2: Using the Kitchen Aide spiralizer, use the noodle blade for the perfect cut. Place the squash in the spiralizer and turn it on.
Step 3: In a frying pan, add 1 tbsp butter and a swirl of olive oil.
Step 4: Add noodles and cook for about 7-8 minutes. Season with garlic salt, salt, and pepper.
Layer the squash noodles so you can get some volume on the plate. Top this pasta off with the creamy alfredo sauce that will make you want more. Enjoy!
