Baked Pineapple and Mango Chicken with Bone Suckin’ Sauce

 

 

I enjoy making a meal that will wow my wife and that my 9 month old can have. This is a recipe that I have made several times that I have just can not get enough of. In this recipe you have a baked chicken breasts with fresh baked fruit on top. Served on the side I have chosen corn on the cop and a garlic knot bread. In case you are wondering what is written on the plate I am currently working on my signature for my dishes I make. This signature stands for Body By Bryan and is still subject to change. There are three factors that really set this dish apart. One is the Bone Suckin’ Sauce Rub that I covered each chicken breast with [As you can see below]. The second thing that sets this recipe apart is the delicious BBQ sauce that I used on this chicken. Some sauces are over powering and don’t allow you to truly appreciate the meat ,however the Bone Suckin’ Sauce compliments the chicken very well. The last thing that sets this recipe apart is the fresh Pineapple and Mango that I baked on top of this chicken for 50 minutes. These two fruits add so much juice, sweetness, flavor, and pizazz.

To make this recipe you will need the following ingredients:

1. 6 chicken breasts

2. 1 canister Bone Suckin’ Sauce Rub

3. 1 bottle Bone Suckin’ Sauce BBQ

4. 6 corn on the cobs

5. 1 package of garlic knots

6. 1 tbsp of liquid smoke

7. 4 tbsp of butter

8. 1 fresh pineapple

9. 1 fresh mango

10. 1 canister Bone Suckin’ Sauce Vegetable seasoning

Chicken Breasts-

First, you will need to preheat your oven to 400°F for 55 minutes. Before cutting up your fruits make sure you wash them off with water. Second, you will need to cut up your fresh pineapple and mango. Cut these fruits into strips. Third, you need to use the rub and cover both sides of the chicken breasts like in the picture above. Next, take your fruit strips and lay them on top of the chicken. After that add 2 tbsp of butter and lay in the middle of the chicken breast (for flavor). Next, add your liquid smoke and splash it on the chicken. Lastly, place the pan of chicken into the oven for 55 minutes at 400°F. After the 55 minutes are up they should look like the picture below.

Take the chicken and fruits and place them in a crockpot on low setting. Pour the juices from the pan into the crockpot and add 1 cup of Bone Suckin’ Sauce BBQ. Let this stay in the pot for minimum 30 minutes.

Corn-

First, if your corn is frozen let it defrost in a pan in water so they can absorb the liquid. Take the vegetable seasoning and sprinkle it on the corn. Add 2 tbsp of butter for flavor. Put in a pan for 20 minutes at 400°F.

Garlic knots-

Place the frozen knots on a pan and place in the oven for 20-25 minutes at 400°F.

I have recently discovered this Ford’s Gourmet Foods company that makes Bone Suckin’ Sauce. I wouldn’t make a post about this if I truly didn’t think this is the Best BBQ Sauce I have ever tried!
