As parents we just simply don’t have enough time in our busy days to make a big breakfast. From the second we wake up and make our coffee we are go,go,go! I have put together a quick ,but healthy breakfast for my wife. Now for all you that are mom’s out there you know, whatever is on your plate the little one will want some as well. This is great for the little hands that make there way on the plate. This is a flatbread with egg yolks, avocado, banana with sriracha and paprika dusted on top. The banana and extra avocado on the side is what I recommend giving the little ones since the sandwich has sriracha on top.
To make this you will need the following:
1. 1 Flatbread or bread of choice
2. 1 banana
3. 1 avocado
4. 1 tbsp paprika
5. 1 tbsp sriracha
6. 4 egg yolks (no whites)
7. 1 tbsp mayonnaise
8. 1 tbsp mustard
First toast your flatbread, then cook your eggs till they are over medium, then cut off all the egg whites (white part of eggs). Put your egg yolks in a bowl add the mayonnaise and mustard. Stir together and mash any parts of the egg that want to clump together. Pour onto your flatbread. Next cut open your avocado (carefully), once its cut open use a spoon to get out the seed. Take your knife and make long slices in the avocado vertically. After you have made your slices then take your spoon and between the skin and the avocado place your spoon and push the avocado slices out. Place half of the avocado on top of the sandwich and the other half on your side of your plate. Dust the top of your sandwich with paprika and sriracha. Cut your banana up and place on the side and enjoy your breakfast!
