I wanted to make something quick, easy, and delicious for my wife. My wife is a huge pizza fan and we are working on eating healthier foods. You can make this appetizer quick and easy or if you want you can dress it up by some added toppings. This is ideal for an appetizer or snack at your party.
Ingredients:
- 1 can croissants
- 1 can pizza sauce
- 1 cup Spinach leaves
- 1 cup mozzarella cheese
- 1 cup tomatoes
- 1 garlic clove
- 1 tbsp. olive oil
First, open the can of croissants and roll them out on a cookie sheet. If you will lay down a piece of non stick foil that covers the cookie sheet ,this could save you some time on cleanup at the end. Spread one tbsp. of pizza sauce on each rolled out croissant. I personally do not like big pieces of spinach leaves on pizza. I got out my Nutribullet blender and placed the one cup of spinach leaves in the blender. Once they have blended to the size you would like then sprinkle the spinach leaves on top of the pizza sauce. For the next step when adding the tomatoes you can either slice them or blend them up into a thicker paste. My wife is not a fan of tomatoes so I try and blend them up so she cant really tell the difference. Once you are done placing your tomatoes on the croissants then sprinkle in your mozzarella cheese on top of the sauces. Roll the croissants (Starting with the bigger ends) up till everything is wrapped up inside. Place in the oven at 400F for about 15 minutes or till they are golden brown. If you want to make this plate a little fancy you can take one garlic clove and cut off the end just so the tops of the cloves are showing. Take a piece of foil and place around the clove with the top still open. Take one tbsp. of olive oil and pour inside the clover or until all the cloves are submerged with the oil. Once all the cloves are covered twist the foil around the top of the clove so the oil will not leak out. Place into the oven for 60 minutes at 400F. After the garlic is baked wait about 15 minutes to let the oil inside the clove can cool down. Pull out the baked individual cloves and place on top of the croissants.
